Obtaining necessary licenses and permits to operate a home-based food business can be a costly affair. But how much the cost may be the risk of business is always low caparing to the large setup outside. “Till now I have only invested INR three lakh in my business. It has been six months as of now and my total sales is INR 9.6 lakh till now. I wont say this is huge but yes I have surely been able to take out the money I have poured in. Had it been I would have opened a physical outlet, I would have still been struggling to break even,” Shikha of Sumi Kitchen from Bangalore commented. 

The only hurdle: Delivery

Most people who cook at home struggle with the logistics of delivery. Although many businesses have emerged to provide delivery services at reasonable rates, it may take some time and effort to identify a trustworthy provider. A business called Mood was founded in 2018 by Nicole Juneja and her mother Kusuma Juneja. 

The epidemic caused them to shift from a takeout-only business model to one that also includes delivery. "While the lockdown did help us expand our business indeed, it was our best year ever one of the biggest challenges we had was figuring out the logistics, especially the deliveries. Finding someone who can be counted on is challenging "Juneja remarked.

As many have pointed out, the cost of ingredients is far higher for home chefs because they work on a smaller scale. As an added bonus, they use high-quality, authentic, and pricey ingredients. "Despite a little decrease in shipping expenses, I've had to increase prices to cover the rising costs of materials and packaging. And before the epidemic, I would visit wholesale marketplaces to source my raw materials; now I can't, which has increased my prices "says Sweta Andrews, who started the bakery chain Bake Ahoy, which is known for its artisanal and high-end products.

High potential ahead

All home cooks with a yearly revenue of INR 12 lakh or more are required by law to register with the Food Safety and Standards Authority of India (FSSAI) as of November 2020. A fine of INR 5 lakhs or imprisonment may be imposed in the event of noncompliance. But while this may seem like a major inconvenience, it actually isn't. Logging into the website, submitting a few documents, and paying a little fee will result in the task being completed in two to four weeks. With thousands joining the army of home chefs, the competition has multiplied, leading to everyone trying out new methods to woo clients.
